The aim of this study was to compare recovery, selectivity of different winter savory (Satureja montana L.) essential oil extraction methods and radical scavenging activity of extracts. Extraction of essential oil from raw plant material was performed using liquid extraction with aqueous 75 methanol, supercritical CO2 extraction and hydrodistillation. Analysis methods of the extracts used were gas chromatography, high performance liquid chromatography with DPPH reaction detector, capillary electrophoresis and spectrophotometric methods. Results of the investigation have shown that highest (p<0,05) extraction recovery () of S. montana L. essential oil and so selectivity to main volatile compound carvacrol was achieved by liquid extraction, i.e. 51,2 2,2 and 5,93 0,21 mg/g D.W. respectively. According to analysis of phenolic acids, flavonoids and free amino acids of the extracts, it was estimated that hydrodistillation method had the highest selectivity to S. montana L. essential oil, while the lowest selectivity was obtained using liquid extraction. Total radical scavenging activity of volatile compounds in different extracts positively correlated with concentration of carvacrol and maximum (p<0,05) activity was determined in S. montana L. essential oil, prepared using liquid extraction method, i.e. 12,15 0,29 mgCE/g D.W.
