A report from Shiraz University in Iran discusses the impact of Satureja essential oil (SEO) on the mRNA generation of NFR2, NF-kB, and NOX in macrophages stimulated with hyperglycemia. The study found that different constituents of SEO exhibited comparable antioxidant capacity and anti-oxidation properties. SEO also decreased NOX and NF-kB activity and increased NFR2 in hyperglycemia-stimulated macrophages. The research suggests that gelatin/SEO could be used as a functional ingredient in bioactive food products for the treatment of diabetes, oxidative stress, and inflammation.
