Background and objectives: The oils undergo qualitative changes, especially oxidation due to prolonged exposure to high temperatures during storage, as well as the presence of oxygen in the environment. Antioxidants are used to protect the oil from oxidation. Most of the antioxidants that used in the food industry are synthetic hence harmful to health. Therefore, studies on the use of natural antioxidants as a substitution for synthetic ones are of prime importance. It has been proven that synthetic antioxidants have known toxic effects, so essential oils which are volatile oils and secondary products of plants are used as natural antioxidants in oil-based foods. Materials and methods: In this research, the rosemary essential oils (extracted (by Clevenger and commercially extracted) as a natural antioxidant, were added to sunflower oil, soybean oil, and tallow in concentrations of 0.05. 0.1, 0.2 and 5.0%. Fatty acid composition, iodine, peroxide, and saponification values were measured. Also, identification of essential oils was performed by spectrophotometric and gas chromatography methods. The antioxidant activities of essential oils were determined by the DPPH method. Results: The results showed that the number of active compounds in commercial samples (69.69%) was higher than those of manually extracted samples (52.35%) and they scavenge more DPPH radicals than Clevenger extracted type. Linoleic acid was the predominant fatty acid in soybean and sunflower oils. However, oleic acid was found in the highest amount in tallow. There was a direct relationship between the amount of effective compounds and the antioxidant activity of the essential oil. The antioxidant activity of the two essential oils, measured by the DPPH radical control method, also indicated that the commercial essential oil had a higher antioxidant activity. Increasing the concentration of essential oil increased oxidative stability in the samples, so that the highest stability was observed in the sample with a concentration of 0.5% essential oil. The results showed an increase in the amount of peroxide value during the storage period, which was lower with an increase in essential oil content. Iodine and saponification values of the samples also showed a decreasing trend with increasing concentrations. In all experiments, the commercial essential oil was more favorable. Conclusion: According to the results, the synthetic antioxidants can be can be replaced with rosemary essential oil to enhance the shelf life and quality of the oils. [ABSTRACT FROM AUTHOR]
سابقه و هدف: روغنها به دلیل قرار گرفتن طولانی مدت در دماهاي بالا، نگهداري و حضور اکسیژن در محیط، دچار تغییرات کیفی بهویژه اکسیداسیون مـی شـوند. اسـتفاده از آنتـی اکسـیدان یکـی از راه هـاي محافظت روغن از اکسیداسیون میباشد. از آنجاییکه اکثر آنتیاکسـیدان هـاي مـورد اسـتفاده در صـنایع غذایی، مصنوعی و براي سلامتی مضر میباشند. مطالعات در خصوص استفاده از آنتیاکسیدانهاي طبیعی بهعنوان جایگزین آنتیاکسیدان سنتزي از اهمیت ویژهاي برخوردار است. امروزه بـه دلیـل اثـرات سـمی شناخته شده آنتیاکسیدانهاي مصنوعی، اسانسها که روغنهاي فرار و محصولات ثانویه گیاهان هستند، بهعنوان آنتیاکسیدان طبیعی در مواد غذایی با پایه روغن استفاده میشوند. مواد و روشها: در ایـن پـژوهش، اسـانس رزمـاري اسـتخراج شـده بـا کلـونجر و تجـاري بـ هعنـوان آنتیاکسیدانی طبیعی در غلظتهاي 05/0 ،1/0 ،2/0 و 5/0 درصد (وزنی/وزنی) جهت سنجش فعالیـت آنتیاکسیدانی به روغنهاي آفتابگردان، سویا و دنبه (چربی حیوانی گوسفندي) افزوده شد. ترکیب اسید چرب، اعداد یدي، اندیس پراکسید، زمان پایداري و عدد صابونی تیمارها مـورد بررسـی قـرار گرفـت. همچنین شناسایی اسانس استحصالی با دستگاه اسپکتروفتومتري و ترکیبات موثره دو اسانس با دسـتگاه طیف سنج نوري انجام شد و خاصیت آنتیاکسیدانی اسانس ها به روش مهـار رادیکـال DPPH تعیـین گردید. یافتهها: نتایج نشان داد میزان ترکیبات موثره شناسایی شده در اسانس تجاري 69/69 درصد و بیشـتر از اسانس استحصالی 35/52 درصد بود و توانست رادیکال DPPH را به میزان بیشتري مهار کنـد؛ ترکیـب اسیدهاي چرب روغنها و چربی حیوانی با دستگاه کروماتوگرافی گازي بررسی شد. بیشترین میزان اسید چرب در روغنهاي سویا و آفتابگردان اسید لینولئیک و در چربی حیوانی بیشترین مقدار اسـید اولئیـک بود. ارتباط مستقیمی بین میزان کمی ترکیبات موثره شناسایی شده و فعالیت آنتیاکسیدانی اسانس یافت شد. فعالیت آنتیاکسیدانی دو اسانس که با روش مهار رادیکال DPPH اندازهگیري شد نیز حـاکی از آن بود که اسانس تجاري فعالیت آنتیاکسیدانی بالاتري داشته است. با افزایش غلظت اسانس این پایـداري بیشتر شد بطوریکه بیشترین پایداري در غلظت 5/0 یافت. با افزایش میزان غلظت اسانس عدد یدي و عدد صابونی تیمارها نیز روند کاهشی نشان دادند. در تمامی نتایج اسانس تجاري، رزماري مطلوبتر از اسانس استحصالی عمل کرد. نتیجهگیري: در نهایت با توجه به نتایج بهدست آمده در پژوهش حاضر، اسانسهاي گیـاهی مـی تواننـ د جایگزین مناسبی براي آنتیاکسیدانهاي سنتزي باشد و 5/0 درصد اسانس تجاري رزماري در روغنها و چربی حیوانی پایداري اکسایشی آنها را بهبود بخشید. درصد اسانس مشاهده گردید. نتایج بهدسـت آمـده روند افزایشی عدد پراکسید طی دوره نگهداري را نشان داد که این روند با افزایش میزان اسانس کاهش [ABSTRACT FROM AUTHOR]
